The Godfather



With a name like the Godfather, you know this has to be good! This is one of Ethan's favorite combinations. The salty prosciutto and creamy fresh mozzarella are a match made in heaven. Add oven dried tomatoes, pesto, baby arugula, and Italian bread and this is an unbeatable combination. Fuggeddaboudit!


Ingredients for The Godfather:

serves 1


1 Italian Hero Bread, 8 inches long

2.5 ounces of prosciutto

1/2 pound fresh mozzarella, sliced...there is enough to nibble on a piece or 2

2-3 oven roasted tomatoes, Click HERE for the recipe

a handful of baby arugula


Time-Saving Tips: Feel free to use purchased pesto. The oven roasted tomatoes are so good but if you don't have them ready you can substitute sun-dried tomatoes packed in oil. Be sure to pat off the oil. The oven roasted tomatoes are soft and melt in your mouth and the sun-dried tomatoes are chewier.

We're ready to make the sandwich.



Slice the bread in half, lengthwise. Spread 1 1/2 tablespoons of pesto on each piece of bread. Starting with the bottom piece of bread, layer the prosciutto and mozzarella on top . Cover the cheese with the arugula and tomato slices; top with the bread.


It's ready! This is such a delicious sandwich. It's perfect for lunch, even a quick dinner or make a platter of these and invite your friends over. I promise everyone will love it.
