This chicken is a favorite in our house. It's just a few ingredients, easy to prepare, and delicious! I have been known to make this either as a quick night meal or for a nice dinner party. After all, who doesn't like chicken?
Ingredients for No Fuss Favorite Chicken
3 pounds bone-in chicken thighs
2 Tablespoons Olive Oil
1 Tablespoon of Williams Sonoma Potlatch Classic Seasoning or your favorite seasoning
Kosher Salt
Time Saving Tip:
A great weeknight time-saver is to use a disposable baking pan and baggie to combine all of the ingredients. There are no pans to scrub, or big bowls to "de-chicken." This is also great when you have company due to the quick clean up . The less time you spend in the kitchen the more time you can spend with your guests.
First rinse and trim all of the chicken thighs. If you prefer not to rinse please do whatever makes you most comfortable. Be sure that the chicken is dried before the next step.
Here is the seasoning that I use. It is a little pricey but I do love it. And I find that it does last for a while. It is awesome on the chicken and makes amazing roasted potatoes as well. I believe this Potlatch seasoning is actually for salmon though I never use it on fish. Feel free to substitute your favorite dried seasoning for this one.
Now add the chicken, olive oil and seasoning to the baggie. Smush everything around until you can see that the chicken is evenly coated.
Place the chicken thighs in the pan making sure that none of them are touching. Bake in a preheated 450 degree oven for 35-40 minutes depending on the size of each piece. How do you know when they are ready? Tap the chicken with the tip of you finger. If the skin is all crispy that means they are ready.
Dinner is served! Get them while they are hot. They will be crispy, juicy and delicious. Even leftovers are yummy.
