Easy Weeknight Salmon



Salmon is one of my go-to fish for a quick, weeknight meal. I especially love it with a simple Asian style marinade and baked in the oven. Easy Weeknight Salmon is such a deliciously simple meal to prepare, and it comes out great every time.


Ingredients for Easy Weeknight Salmon:

yields 4-6 servings


Salmon:

4-6 salmon fillets, 2 pounds

3/4 cup soy sauce

1/2 cup water

2 tablespoons Mirin

4 cloves garlic, minced

2 teaspoons minced ginger

3 tablespoons light brown sugar

1 tablespoon honey

Time Saving-Tips: The marinade for the fish can be made earlier in the day and set aside.

Preheat oven to 400-degrees. Combine soy sauce, water, mirin, garlic, ginger, brown sugar, and honey. Combine the marinade with salmon in a baggie and seal; refrigerate for 20 minutes. Reserve the marinade and transfer the salmon, to a foil-lined sheet pan and place in the oven. Bake until desired doneness 12-15 minutes depending on the thickness of the fish. Microwave the reserved marinade for 2 minutes, cool, and use as a sauce when serving.
