Lemony Spinach Hummus


I've mentioned before that my sons Ethan and Steven love to snack on hummus and pretzels. I always make sure the house is well stocked with both items. So once again, with the boys in mind, I developed this yummy hummus. It's lemony and packed with healthy spinach. A little garlic and perfectly seasoned this hummus is perfect for any time of year.


Ingredients for Lemony Spinach Hummus:


1 15 ounces can chickpeas, drained, liquid reserved and rinsed

*2-3 tablespoons reserved liquid from chickpeas

1/4 cup Tahini

4 tablespoons Healthy Green Food Coloring, Click HERE for the recipe

4 tablespoons fresh lemon juice

1 tablespoon grated lemon peel

3 cloves garlic, minced

2 tablespoons extra virgin olive oil

1/8 teaspoon dashes cayenne pepper

3/4 teaspoon Kosher salt

1/8 teaspoon smoked paprika

3/4 teaspoon kosher salt

serve with pita and vegetables

* Start off with 2 tablespoons of reserved liquid. If you prefer the hummus a bit thinner add the extra tablespoon.


Time-Saving Tips: The hummus can be made in advance.


We're ready to make the hummus.


Now to make the hummus. In the bowl of a food processor add the chickpeas, tahini, garlic, lemon zest, lemon juice, Healthy Green Food Coloring, cayenne pepper, kosher salt, and 2-3 tablespoons of reserved chickpeas liquid. Pulse until it is nearly smooth. I prefer it to have some texture. Adjust seasoning and add a little bit more of the reserved liquid if you would like the hummus a little thinner. It's ready! It looks is so good and it is. Perfect for holiday celebrations, for after school snacks, or anytime you're in the mood for great hummus. I know the boys will love, too.
